About us

Cambray Cheese is a small family operated cheese factory and sheep dairy located in the heart of the South West of Western Australia.


Famous for their award winning ewes milk cheeses, Cambray also produce a range of cow’s milk cheeses.
Visit the farm shop, located on the outskirts of Nannup or find their cheeses at a selection of gourmet delis and venues around the state. 

Our Story

Discover the Heritage of Cambray Cheese Farm

Cambray Sheep Cheese is a small family-operated business run by the Wilde Family which has achieved remarkable success since opening in 2005. The unique range, all awarded gold medals, includes soft white-mould cheeses, a traditional Greek style feta, and a variety of matured cheese including the famous Farmhouse Gold.Cambray’s vision was borne from Jane’s passion for dairy, which stemmed from her childhood of helping her mother milk their house cow and churn butter in Karragullen, paired with Bruce’s experience in sheep, growing up on a sheep farm in Pingelly. This led them to purchase a farm on the outskirts of Nannup in 1995.The former policeman and nurse begun the journey by importing 3 East Friesian milking sheep into Western Australia in 1997, they then started the lengthy process of breeding a suitable milking flock. By 2003 they commenced building the factory. At this time, youngest son Tom was leaving school and started to help out, Bruce and Tom built the factory by themselves and it was ready to start cheese making by 2005.With guidance from a Dutch cheesemaker friend (Eddie Bestbier), Jane and Tom developed their own unique style of sheep and later on, cow’s milk cheeses. Originally selling the cheese through local farmers markets and their own farm shop, the business has expanded somewhat since the beginning and now supplies many of WA’s top restaurants and specialty cheese stores. Cambray prides itself on its high quality and traditional methods for a true paddock to plate product.

Our cheeses

Cambray Cheese specialises in both sheep and cow’s milk cheeses, with the sheep milk products being seasonal (from September through to March). Cambray also do a selection of cow’s milk cheeses throughout the year. The cow’s milk is sourced from ‘Walsall Dairy’ a small family run dairy just out of Busselton in Acton Park. Walsall Dairy have received numerous gold plaque awards in the Dairy Australia Milk Quality Awards (Top 100 dairy farm in australia). This high milk quality results in great tasting cheeses.

Flavoured Gouda

Visit our Farm Shop 

Visit Cambray Cheese farm shop, located 12 km outside the picturesque town of Nannup, in the heart of the South West of Western Australia.
​

The farm shop is open 10am – 3pm daily for cheese tastings and sales. The shop also stocks a range of local produce and giftware. You can also view the cheesemaking from the viewing windows, located inside the shop and on the outside (cheesemaking days do vary).

​
During the sheep milk season, customers will also have the opportunity to view the afternoon milking from 3pm – 4pm daily. The season runs from approximately August - February.Please phone ahead first if you wish to watch.

 

*Please note that dogs are not allowed on the property.

Tour Groups

Tour groups are also welcome to the farm. We can cater for groups (minimum of 10 to a maximum 30 people) for private tastings and farm tours – please contact us for a quote.

Caravans

Caravans are also welcome to the farm. There is ample parking in the paddock that can be accessed by driving straight over the cattle grid (if you can’t fit into the shop carpark). If you have a large group travelling together and wish to stop, please phone ahead and we can give you instructions on where to park.

Farm Stay Accommodation

Set on 160 acres of picturesque farmland and surrounded by native bush, Cambray Cottages at Jarrah-Lea Springs, Nannup, offer the ultimate holiday getaway.
​

Each cottage has full kitchen facilities plus an outdoor BBQ area, complimentary tea and coffee, and laundry facilities on request.

Guests receive a delicious Cambray Cheese platter on arrival.

Perfect for couples or families, the Farm Cottage offers a comfortable and relaxed stay in the heart of the farm. The cottage sleeps up to four guests; features two queen-size beds, a spacious living area and a fully equipped kitchen. From the cottage, enjoy open views across the farm and surrounding bushland.

Bush cottage

Ideal for families or small group, the Bush Cottage offers a relaxed stay surrounded by native bush. The cottage sleeps up to six guests; It features two queen-size beds and a bunk bed, along with a generous living area and full kitchen facilities. A great option for longer stays or travelling with kids.​​​
